During these months we have endured the longest season ever. Time stood still for fourth months, requiring us to exercise the art of patience. At Pomì we have learned the virtues of patience and waiting from the earth, respecting its times and cycles that must never be rushed, but rather patiently awaited:
Summer is the season we await with respect and trepidation. During the hottest months, tomatoes ripen to perfection, expressing their finest organoleptic properties.
Summer is when the lands of the Consortium provide us with their finest fruit; at Pomì we prepare to celebrate it by harvesting and processing, bringing tomato to the table in all its facets: the softness of puree, the veracity of pulp and the freshness of diced tomatoes...
Between May and June...
Tomato plants are taken to the fields and replanted. Grown tomatoes are nurtured by consortium member farmers. The plants are grown in accordance with rigorous Good Agronomic Practice specifications and subjected to meticulous controls to verify their quality and food safety characteristics, thanks to the constant support of expert Pomì Agronomists who work alongside farmers in the field.
Between July and September...
Once the fruit ripens to perfection, tomatoes from the Consortium's 7000 hectares are harvested using innovative mechanical systems and delivered to nearby plants so as to preserve their qualitative characteristics.
Here tomatoes must pass rigorous testing of their physical and chemical properties before being processed and turned into puree, pulp or diced...
